Ginger turmeric energy balls

Ginger turmeric energy balls

Makes 12-15 balls.

1 cup raw cashews (or almonds)
½ cup shredded coconut (+ extra for rolling, optional)
½ cup Medjool dates (pitted)
1 tbsp maca powder
1 tbsp hemp seeds (for extra protein and omega-3s)
1 tsp ground turmeric
1 tbsp freshly grated ginger 
½ tsp cinnamon
1 tbsp marine collagen (optional)
1 tbsp coconut oil (melted)
1 tsp vanilla extract
Pinch of sea salt
Zest of ½ a lemon 

In a food processor, blend the cashews and shredded coconut until they form a slightly coarse meal. Add the dates and process until well incorporated.

Sprinkle in the maca powder, hemp seeds, turmeric, ginger, cinnamon, marine collagen (if using), coconut oil, vanilla, salt, and lemon zest. Blend until the mixture comes together into a sticky dough.

Scoop out small portions and roll them into balls. Roll the balls in shredded coconut or leave them as is. Store in the fridge for up to 1 week or in the freezer for up to a month.
